 Research

The sensory and nutritional quality of low moisture foods during long-term storage is unknown. Research is needed to improve understanding of the effect of temperature, humidity, oxygen and other environmental conditions to which foods are subjected during distribution and long-term storage, including home storage, on the quality and shelf-life of specific food commodities. Focus is on the development of practical methods for controlling and mitigating environmental effects to extend shelf-life during distribution and long-term storage.
